Just choose "Browse" and attach the log file to the email.

Radionomy stats will only work if you provide your username and password on the Listeners page.

When we build the administration console shoutcast was still changing the way things worked on their side. I will try to test it on the latest version and get it fixed up before the next update.

You would set it up the exact same way you would as an Icecast 2 stream.
Setup your mount in Steamcast, give it a Mount User and then use those authentication details to send a stream to it from Edcast just as you would in an Icecast 2 server.
