intro file and backup file

is there a way to set a intro file and a backup file in my steamcast server ?

not with the current release, I am working on rewriting some core stuff in steamcast to allow this in the next version.

can you tell me some other way to keep my liteners on the server till i'm changing my source streams ??

you can use the SourceBackup feature and point to another mount which has a stream on it that is using an identical format as you would with the backup file. You can also set the ClientTimeout to a huge number so that they hang there until the source reconnects.
